Ristorante Interno Due – Research and Passion

For passion, for work or just to appease hunger, everyone, who more or less frequent restaurants.

As I wrote in the header, here I write what I like and what I feel, for which I thought it was normal to speak of posts in which i found myself well and with this post I inaugurate a new category in the blog : where to Eat.

In my head I don’t believe I can define “Reviews” lines that go to publish, but are simply the written transposition of my feelings about a fragment of my life of gastronaut.

Today I’m writing about a restaurant that is located in the center of the splendid place where I live, Saluzzo, a magnificent little reality that has a lot of history and it would be worthwhile to see, so much so that recently also talked about USA Today, inserting it in the 11 small Italian villages to visit before we get the big public (https://www.usatoday.com/story/travel/destinations/2017/10/19/italy…/776657001/) .

I know Paolo Lautero (Chef) and Nicolò Artusio (Maitre and factotum) for several years, and they are the owners awake and capable of this room.

They found by some years but is for decades that this place (in addition to be restaurant is also lounge/bar Disco with dj set in adjacent rooms) moves the evenings of the area.

It is not simple outside of the metropolis, find restaurants that will allow you to sit at dinner after the 9,30-10 pm.

Especially in the weekend, accomplice dilate time because Happy Hour or simply because we realize that it’s late and is now to ingest something solid, the possibility to have the comfort of a certain type of restaurant can offer, you can definitely bring pleasure.

When i’m in the area on the weekend i come to take a ride on the late, but was for almost a year that I don’t sit at the tables of the restaurant for which I was rather curious .

I booked but arriving at 10pm, we have a Martini Cocktail while cheating the waiting for a table, for which a half an hour after while having a nice choice of dishes on the menu, we decided to rely completely on the hands of Paolo.

Tell a chef “You Do” entails risks but at the same time denotes total confidence in the workings of the kitchen, putting it obviously a little under the right pressure .

As I hoped (and I expected), trust was rewarded with a wonderful choice of dishes from the entrée, passing for a great combination between raw shrimp and truffle, continuing with a Patanegra served with a mini Negroni to great effect.

But, above all others, the black cod or Saithe (Pollachius virens) of the seas in the North, was spectacular. Normally is a fish that i’m not particularly love, but this I never ate before, has a meat tender and tasty, perfectly cooked and the idea of serving combined with a series of japanese vinegars, has proved to be a winner, Bravi, Great dish.

Dinner ended with a sweet at the height of the rest and a Bill fair and proper to the level of the kitchen.

The wine paired is a Franciacorta, of a company relatively young situated in Erbusco (born in 2004) .

Different from many other products of the area, this Chardonnay that rests for at least 44 months on the lees…I like it very much.
